Feta cheese parcels • Feta tiliki me meli kai sesami
These delicious individual cheese pies are served as part of a meze or as a starter. They can also be made with unsalted anari cheese which is similar to ricotta cheese and then becomes a dessert which I like to serve with mastiki ice-cream (p103) as if not already indulgent enough.
8 leaves of filo pastry
5 tbsp of olive oil.
8 tbsp of Greek thyme honey
(or a drizzly honey)
2 tbsp of sesame seeds
4 pieces of feta cheese
(about 100g each)
3 tbsp of ouzo
Pre-heat the oven to 180°C/Gas 4. Place one sheet of filo pastry on a large lightly oiled baking sheet then brush all over with olive oil; lay another sheet directly on top. Place a little slab of feta in the centre of the pastry, drizzle on 1 tablespoon of honey and sprinkle with sesame seeds. Fold over the pastry to encase the cheese, making a secure parcel; brush with oil again. Repeat until you have four parcels spaced evenly out on the tray. Bake for around 20-30 minutes or until golden. Carefully lift onto individual serving plates Gently warm together the remaining honey and ouzo in a small pan. Drizzle over the parcels, scatter with more seeds and serve.
