Pistachio Power Balls
I love snacking.
One of my fellow cast members on the tour I am on calls me a little rabbit – always in the corner munching on something (leave your dirty jokes at the door please…!). ‘Healthy’ snacking can be challenging sometimes, so here is where my Pistachio Power Balls come into fruition. These are great for a pre work out snack or a mid morning, pre lunch hunger pang. I’ve actually chopped one of these up and chucked it into some greek yogurt for dessert too…I mean, the possibilities are endless.
Vegan, Gluten Free, reduced sugar AND super easy to make – there is no guilt in your snacking habits with these. Enjoy!
Ingredients for Pistachio Power Balls
15 pitted dates (about 130g)
75g (+ optional extra 20g) shelled pistachio nuts
150g (gluten free) oats
35g coconut oil/sunflower oil
30g date syrup/maple syrup/fruit syrup
makes about 15 Pistachio Power Balls
One baking sheet/plate
1) In a small saucepan over a low heat, melt your coconut oil. This will melt quickly, so keep an eye on it. Once done, move to the side to cool. If you are using sunflower olive oil instead of coconut oil, ignore this step.
2) In a food processor or nutri bullet chuck in 75g of shelled pistachios and all of your oats. Whizz until fine and flour like, then pop them in a medium bowl.
3) Now put your pitted dates in the food processor/nutri bullet and whizz again until mushy. Chuck these into the same bowl as the oats/pistachios.
4) Pour your (cooled) coconut oil and chosen syrup into the oat/nut/date bowl and mix together. I found it easiest to use my hands – warning: it gets a little sticky! Mould the mixture into a massive ball.
5) Using the palm of your hands, roll the mixture into about 15 golf ball sized balls and place on a baking sheet/plate.

6) Whizz an extra 20g of shelled pistachios in your food processor/nutri bullet and place in a small bowl. Take each Pistachio Power Ball and coat in an extra layer of nuts.
7) Place in the fridge to set for an hour or so and your done! I keep mine in the fridge as they last a little longer and keep fresh. However, you can store them in an airtight container for a few days if you’re away from a fridge.
