Rhubarb and Strawberry Breakfast Smoothie
As Autumn creeps in at a steady pace. I wanted to take advantage of the last of some of the summer fruits available for this delicious Rhubarb and Strawberry Smoothie. Generally, this fruit, ( sometimes classified as a vegetable )is connected with deserts namely rhubarb crumble or pie, or cooked in some way. But this “marmite” fruit/vegetable ( Rheum rubarbaceum) has an abundance of goodness, especially when consumed raw and unsweetened. Dousing it in sugar will in my opinion negate a lot of it’s powerful health benefits. It’s packed full with minerals and vitamins including vitamin C and K, antioxidents, protein and a whole host of nutrients when consumed as part of a healthy diet to help keep our bodies healthy. It’s so delicious too! Stay away from the leaves as they are said to be poisonous.
Rhubarb doesn’t only come in red, you also find pink and green rhubarb too. The redder the stalk the sweeter the flavour. In this smoothie I’ve combined red rhubarb with strawberries, which are naturally sweet so really no need for added sweeteners.
You can go on enjoying Rhubarb and this smoothie for a while longer. you can substitute the strawberries for another naturally sweet fruit in season, apples perhaps?
1 cup of chopped Rhubarb
1/4 cup of Strawberries
1/4 cup Raspberries
1/2 cup of Kale (I’ve used steamed and frozen)
2 tbsp Oat Bran
1 cup of Almond milk or any diary free alternative of choice
Super simple, chop all ingredients and add the milk and water to the blender. Any frozen fruit of veg thaw for a minute or two. If using a Nutribullet, add water to the Maxline. Blast until smooth. Suitable for Vegans. Serves Two.
