Christmassy Sweet Potato and All Spice Smoothie
Some of you maybe thinking sweet potato in a Smoothie? What’s more, raw?
Ok firstly, this smoothie is really delicious. It’s a fantastic substitute for Bananas. Which of course serve as a nutritious creamy thickener to a smoothie. Secondly, just to allay any fear at the thought of eating raw potato…. you have the option of using steamed or baked potato too. Obviously leaving enough time for it to cool down first. So this smoothie can work well using last nights leftover sweet potato, or cooking enough to use at a later date.
I must at this point discuss (briefly) the benefits sweet potato with or without out skins. To eat raw, I would suggest that if you have digestion issues you stay away. But the sweet potato is full of beta-carotene and finer, Vit A and C plenty of Potassium and Iron.
What makes this smoothie taste ‘christmassy’ is the addition of the all spice. The Cinnamon, Nutmeg and Cloves are almost quintessentially a Christmas thing. This one really is delicious and filling, a great one for what feels like a hearty breakfast. A bit of respite from the over indulgence at Christmas…or is that just me!!! Simply Yummy!!
2 Handfuls of Spinach
150g/5oz Sweet Potato ( raw or cooked)
1/4 teaspoon All Spice
1/2 Cup of Almond Milk
1 teaspoon of runny Honey
Rinse ingredients well.
Cube the Sweet Potatoes, leaving the skin on (raw). If using steamed potato without. Or baked; scoop flesh out or slice with skins on.
Add Vegetables All Spice Milk, Honey and Water to the NutriBullet tall cup, making sure the contents do not exceed the Max line.
Blend until smooth.
That’s it! A super simple and totally delicious Christmassy smoothie!!
