Before you make this I would just like to manage expectations, this is not going to taste like a dominoes pizza. It will however, taste yummy, look like a pizza & provide your body with lots of nutrients that leave you feeling satisfied & without any of the guilty feelings normal pizza gives us. These are the reasons I love this recipe so I hope you do too!
35g ground almonds
A small handful of Coriander and basil chopped very very finely
Toppings: these are my recommendations but you can chop and change to suit your preferences
Chop your cauliflower up and put it in a blender once weighted, blend this until it has consistency and looks a bit like cous cous.
Pop it in a microwaveable bowl, cling film over the top and microwave for around 3 mins.
Take it out and get some kitchen roll, and using this press down on the cauliflower which will begin to soak up any moisture, you want to get rid of the moisture so that the base of your ‘pizza’ can go crispy.
Once this is done, add your herbs and ground almonds. Mix well
Put some baking paper on a pizza tray and begin to put the pizza base mixture on the tray, use your hands to spread it out on the tray into a pizza shape. I like to keep it fairly thin, as it cooks quicker and goes crispier.
Pop this in the over on 180 for 20mins
Meanwhile, if required, cook your toppings eg the bacon onions etc.
Once your pizza has being to go a bit golden brown on the edges you can take it out and add your tomato puree, using a knife, then add your chosen toppings, cheese is always a good idea here.
Pop it back in the oven for 7-8 mins, depending on how melted you like your cheese.
Take it out of the oven. Off the baking paper on to your plate.
I like to enjoy this with a side salad!
