Lianne’s Healthy Meal Plan ideas….
Eat healthily, not less!
Hopefully if you have been following the recipes for the last 3 days, you will notice that you are having yummy meals and not feeling hungry in-between, Dinner tonight is a big hit in my house and easy to do. Also a great way to get kids to eat more vegetables and less pasta. You will know what I mean if you have little ones.
Day 4
Breakfast
Scrambled eggs
Scramble eggs add veg of your choice, I love sugar snap peas, tomatoes, Kale and top with Chia Seeds.
Lunch
Salmon and Vegetable Rice
Bake your salmon in the oven and then break into cooked rice, add some veg to give it a bit of crunch – I usually wilt spinach and mix it all together with a touch of sweet chilli sauce.
Dinner
Courgette linguini
In a pan heat some olive oil and garlic, fry for 30 seconds and add cherry tomatoes, simmer for 10 mins.
Use a Mandolin or Potato peeler to cut the courgettes lengthways making long ribbons. Cut the ribbons into 3-4 strips to make linguine. Crush up the cherry tomatoes with a fork and stir in olives and capers. Season and take off the heat. Toss the courgettes with the sauce.
Snacks
Sweet potato crisps
Peel Sweet Potatoes. Once peeled use the the Potato peeler to cut the Sweet Potatoes into thin slithers. Place in baking tray with coconut oil and bake in a hot oven for 15 minutes, turning regularly. Be careful they will burn before your eyes if you don’t watch them.
Drinks
Green Tea or any herbal tea without caffeine. Try cooling down and adding ice cubes for Iced Tea.
