Tonia Buxton • Cumin Potatoes • Patades me Kimino
My style of cooking just throwing everything into the pot and leaving it to get on with the job! Good with grilled fish, kebabs or lamb.
Serves 4 as an accompaninent:
4 medium Cypriot potatoes,
peeled and quartered
1 large onion, thinly sliced
1½ tsp of ground cumin
1½ tsp of ground cinnamon
2 tbsp of extra virgin olive oil
400g can of chopped tomatoes
salt and black pepper
Randomly scatter the potatoes and onion slices in a roasting dish. Sprinkle on the spices and just enough salt and pepper to season. Drizzle on the olive oil. Using your clean hands give the potatoes and onions a good swishing over with the oil and spices. Stir in the chopped tomatoes.
Bake in an oven preheated to 180°C /Gas 4 for 40-50 minutes or until the potatoes are tender. If necessary cover with foil towards the end of cooking to keep everything moist…ovens vary so much.
